The Case of the Quince:
What exactly is a quince? To be honest, I don’t even know if I am pronouncing it correctly. But let me give it a go…it sounds like ……. According to the all-knowing google search and never, ever incorrect (sigh) Wikipedia, quince is a pome fruit that “contains apples and pears, among other fruits.” Ok, so that makes a lot of sense. NOT. What does ‘other fruits’ even mean? Like, ‘hey, you guys I have some extra banana so let’s put that with the apple and pear and call it a quince? And what kind of regulatory agency is handling all the quince inquiries? Let’s start from the beginning. I am now ordering a wonderful organic basket of gloriously grown fruits and vegetables that is delivered to my door each Tuesday. I will have a completely dedicated blog post just about this box/ basket or Merry Christmas is Tuesday and you don’t have to shop day crate on a later date. One Tuesday my basket thing arrives and low and behold I have about 6 fruits in there that I have never seen in my LIFE. My family stared at it for about 5 full minutes. So we did some ‘normal’ experiments like a) eating it-it tastes bad, very bitter and overall weird b) leaving it there for weeks and staring at it. So, this is where I am now. We can’t throw it away (because that would be wasteful..boo) and I think people here in Porgual must do something with it because we keep getting it our basket/box. I asked around to anyone who would listen and I found out that our only option is to make a marmalade. Therefore, I guess I have to bring out my inner grandma and make some jam/confiture/jar jelly/canning goodness. I have done a lot of research and I have found two ways to go about this 1) on the stove and 2) in my Thermomix/Bimby. Guess what route I decided to take? Yes, the Bimby because its easier and I love that machine 😉.

Quince-Lemon Marmalade
Ingredients:
- 800g of Quince
- 800g of Sugar
- 1 lemon
- 1 piece vanilla bean
